There are few things better than coming home from a rough Monday at work to homemade soup. Walking through the door and smelling minestrone. The making of a perfectly cozy night at home.
Since this is a slow cooker recipe and the last thing I want to do at 6:00AM is chop veggies, I prep absolutely everything the night before. On my way out the door I simply throw everything in the crockpot.
Combine all ingredients except kale, beans and noodles in slow cooker. Set to high for four hours or low for seven hours. Then add kale, cannellini beans and noodles. Cook for another 30 minutes on high. Enjoy!
