Description

An easy crockpot stew that you can make in no time.

Ingredients

  • 14 ounces, weight Canned Diced Tomatoes With Green Chiles
  • 14 ounces, weight Canned Chicken Broth
  • 1 pound Boneless, Skinless Chicken Breasts
  • 3 cloves Garlic, Minced
  • 1 whole Medium Onion, Chopped
  • 1-½ cup Chopped Parsnips
  • 2 cups Sliced Mushrooms
  • 1 cup Frozen Corn
  • 1 cup Dry White Cannelloni Beans
  • 1 whole Bay Leaf
  • 1 teaspoon Crushed Red Pepper
  • Salt And Pepper, to taste

Preparation

Place all of the ingredients into the ceramic basin of a crockpot. Heat on low for about 6 hours, or until the chicken is fully cooked.

Remove the chicken breasts from the crockpot and place them into a bowl. Using two forks, shred them into bite-size pieces. Place the shredded chicken back into the stew.

Heat for another 30 minutes and serve immediately with chopped avocado!
