Description

Need a pick-me-up on a cold day? This potato soup will warm your belly—and your soul.

Ingredients

  • 10 whole Potatoes
  • 1 whole Onion, Diced
  • 8 ounces, weight Cream Cheese
  • 1 can (10 Oz. Size) Cream Of Celery Soup
  • 1 can (10 Oz. Size) Cream Of Mushroom Soup
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • Milk (optional, For Desired Thickness)
  • 1 bunch Green Onions (diced, For Garnish, If Desired)
  • 1 cup Cheddar Cheese (shredded, For Garnish, If Desired)

Preparation

Peel and dice Russet potatoes into 1-inch cubes and place into a Dutch oven or a large saucepan. Cover with water and boil potatoes and onions til fork-tender. Add cubes of cream cheese to the mixture and stir until the cheese melts. To this mixture, add creamy soups and mix. Add garlic powder, salt, pepper, and milk (if desired).

Serve up the bowls, and garnish with cheddar cheese and green onion.

Easy and awesome! We chopped the potato a bit too small and it ended up a bit mushy, so keep the potato chunks big. But very tasty and reheats well with a bit of milk.

This recipe was easy to follow and my husband (who is a really picky eater) said this was probably the best potato soup he had ever had. I think next time I will add some bacon too.

This is my new favorite potato soup! It is better than I have had at most restaurants! Sooo creamy and delicious! Extra yummy with some bacon pieces crumbled on top!

This was very yummy :)
I used Swanson chicken broth instead of water.
I didn’t have celery soup but used cream of chicken.
I used my immersion blender to make it a smoother texture too.
Yummm, great recipe!

I made this for a girls lunch and it was super yummy! I made it in the morning then simmered it until lunch in the crock pot. I added a lot of extra milk so it wouldn’t get too thick. It needed more milk again when we reheated the leftovers, but it was really yummy! This will be a fall staple!

Really delicious and easy too. I was unsure from the directions – do you drain the potato boiling water or not?
