This is one of those soups that soothes the worst cold. It’s packed full of feel good nutrients without being overpowering in flavor.
Cook spaghetti noodles according to package directions. Then drain and set aside.
In a medium soup pan over medium heat, heat butter and then sauté onion until translucent. Then add in carrots and cook until slightly tender. Add in broccoli. Then pour in cream of celery soup and broth. Stir until combined and let simmer for 20 minutes.
Season with salt and pepper. Add in cheese and more broth, if needed to reach your desired thickness. Simmer until cheese is melted, about 10 minutes.
Add in the cooked noodles. Adjust seasoning to taste.
