Perfect as an appetizer or a meal! This soup is flavorful and easy to make. With chicken broth, cream cheese to complement the artichoke, you will not regret it!
Saute the garlic in oil. Add the potatoes. Saute about 3 mins on medium heat.
Add 10 oz of the artichokes and set the rest aside. Saute about 1 min.
Add the chicken broth. Cook for about 20 mins.
Remove from heat and let cool down about 15 mins.
Put in a blender and add the cream cheese. Puree until smooth.
Transfer back into pot.
Add the rest of artichokes.
In a bowl, mix the other 4 tablespoon of cream cheese with the chives. Top each portion of soup with 1 tablespoon of the cream cheese mixture and serve.
