Description

Feeling like curling up with a bowl of warm, creamy soup? My Crazy Nana’s Creamy Tortellini Soup is just the ticket! A smooth, slightly spicy comfort food, this soup will warm you to the core.

Ingredients

  • 1 bag 10 Oz Bag, Frozen Tortellini
  • 2 whole Hot Italian Sausage Links
  • 2 cloves Garlic
  • 4 whole Green Onions
  • 1 can (26 Oz. Size) Campbell's Tomato Soup
  • 1 can Milk (fill The Soup Can)
  • 1 can (14 Oz. Size) Petite Cut Tomatoes (I Used The Zesty Jalapeno Tomatoes)
  • 1 can Chicken Broth (fill The Tomato Can)
  • 1 can Half And Half (fill The Tomato Can)
  • 1 pinch Sugar
  • 2 dashes Salt
  • ½ teaspoons Pepper
  • 3 cups Fresh Spinach, Chopped
  • ¼ cups Grated Parmesan Cheese
  • Shredded Mozzarella Cheese, Optional For Garnish

Preparation

Prepare the tortellini as directed on the package. Then drain it and set aside in a colander. Since I hate doing dishes, I use the same pan to prepare the soup while the tortellini chill out in the colander.

Remove casing from the sausage and toss the sausage into the pan over medium heat. Chop garlic and green onions and add them into the pot. Breaking up the sausage into little bits and pieces, cook until browned. If you are using a very lean sausage, you may have to add a bit of oil to keep things from sticking to your pan.

Once the sausage is no longer pink, add remaining ingredients, except the tortellini and Parmesan cheese, and bring to a simmer. You want to make sure to add the sugar because it keeps the tomatoes from getting all bitter and nasty.

Simmer for about 20 minutes, long enough for all the flavors to mingle, fall in love, and marry.

Divide the tortellini between eight bowls, and ladle the hot soup over the noodles.

Sprinkle with Parmesan cheese or even a little mozzarella if you’re feeling extra spunky today.
