Description

Well, I may be “Grill Girl” but I still use my stove top from time to time just to make sure I remember how. This week, a tropical depression meant grilling conditions were less than ideal. It was the perfect time to be cozy inside and make this hearty soup.

Here’s a little secret you don’t have to tell your family so they will unsuspectingly enjoy this to the fullest: it is actually low fat, loaded with fiber, and meat-free.

Ingredients

  • 1 whole Onion, Chopped
  • 3 cloves Garlic, Chopped
  • 1 can (10 Oz. Can) Ro*tel Tomatoes
  • 1 can (15 0z. Can) Diced Tomatoes
  • 1 can (16 Oz. Can) Fat-free Refried Beans
  • 1 can (15 Oz. Can) Black Beans
  • 1 can (15 Oz. Can) White Beans (Navy Beans)
  • 1 can (15 Oz. Can) Vegetable Or Chicken Broth
  • 2 cups Whole Kernel Corn
  • 1 package (1 Oz. Packet) Taco Seasoning Mix
  • ½ cans (12 Oz. Can) Lime Beer
  • 2 Tablespoons Lime Juice, Plus An Extra Squeeze For The Sour Cream
  • 3 Tablespoons Chopped Cilantro, Divided
  • ⅓ cups Fat Free Sour Cream
  • Sea Salt And Fresh Ground Pepper, To Taste
  • Grated Mexican Cheese, To Serve
  • Fritos, To Serve

Preparation

Saute onions in a large pot. Add chopped garlic; let it soften but not burn. Next, add Rotel, diced tomatoes, and the refried beans and stir together. Then add the beans, broth, and corn; do not drain the beans but please make sure to drain the corn if used from a can.

Add the taco mix, beer and lime juice. Add 2 tablespoons cilantro. Cover and simmer for an hour.

For the garnish, mix the sour cream with the remaining 1 tablespoon cilantro and a squeeze of lime juice and a dash or sea salt.

When serving, top with cheese and Fritos.

We really liked this soup, especially paired with jalapeno cheddar bread instead of the chips. It was very thick and, despite being meatless, had a very “meaty” texture. The combination of spices with cilantro and lime was very flavorful, and the only disappointment for me is that I was only able to find Bud Light Lime, instead of a more gourmet lime beer. The recipe mentions 5 servings, but those would be HUGE servings. I doubled the recipe, as I often do with soups, and I got 19 one-cup servings. So this is enough to feed several people. We’ll definitely stick this one in our rotation. Thanks for sharing!

This was pretty good; it was thick and hearty. The flavor was excellent. I added a teaspoon of brown sugar to cut the acidity, but otherwise no changes. As it simmered the hubs even said it smelled good, and I know he snuck a few tastes before we ate so it’s a keeper for us!
