Homemade chicken stock makes all the difference in this classic comfort food. See my TastyKitchen recipe box for my chicken stock recipe.
Saute celery, carrots and onions in melted butter until crisp-tender. Add chicken and stock, bring to a low boil. Reduce heat to a simmer and check seasonings. Add bouillon, salt and pepper to taste. Return to a boil, add egg noodles and simmer until noodles are cooked through (cook time according to package instructions). Check seasonings again and if desired, add dried herbs such as thyme, oregano, parsley and/or basil (but if your stock is really flavorful, you might not need to add any herbs). Enjoy!

Pittsburghsara – I’m glad you liked it! Once you have the stock made (I make big batches and freeze it), it is almost as easy as the stuff in the can! Especially if you use rotisserie chicken!

Made this today (and homemade chicken stock yesterday) and everything turned out lovely! Actually, this was my first time to make homemade chicken soup and I much prefer it over the junk in a can

This is an exellent soup. Made it tonight at the last minute. Definitely a keeper!
