This is such a delightfully easy recipe that another mom shared with me. I have made this time and time again. The best part is that all of the ingredients should be right in your cupboards (or fridge). For the green onion, I have a stash in the freezer from our garden. So easy!
In a large sauce pan, combine the first 5 ingredients; bring to a boil.
Reduce heat; cover & simmer until potatoes are tender (about 17 minutes). Reduce heat to low & let it set .
In another sauce pan, melt the butter over medium heat; whisk in the flour until smooth.
Gradually add milk; bring to a boil. Cook & stir for 2 minutes, or until thickened.
Add cheese to milk mixture & stir until melted. Add mixture to the potato pot & stir to combine.
Add crumbled bacon & stir to combine. Serve with sour cream & green onions as garnish.

This is an easy soup to make and it is very tasty! Thanks for sharing it and I’m making it again for dinner tonight – it’s only 35 degrees today, perfect time for it!
