The best Cheesy Ham and Broccoli Soup is a play on a classic broccoli cheese soup with the addition of leftover ham. The perfect easy soup for a weeknight meal.
In a large saucepan, melt butter over medium heat. Add onion and saute until tender and translucent.
Sprinkle flour over sautéed onions. Continually stir flour and onions for 2–3 minutes or until flour starts to brown. Do not burn!
Slowly whisk in chicken broth and half-and-half. Bring to a gentle simmer. Add broccoli. Cook for 10–15 minutes until broccoli is tender, stirring occasionally.
Reduce heat, add Velveeta. Stir until cheese is melted. Add ham. Heat through.
Great served inside a bread bowl.
