This cheese soup is so flavorful and delicious, with so many delicious ingredient add-on options (broccoli, bacon, cauliflower, potatoes, chicken, or sausage to name a few).
Add butter and onions into a large soup pot (3 quarts or bigger) and cook on medium-low heat until onions are very soft (about 20 minutes, stirring occasionally). Whisk in flour until well combined.
Add chicken broth and whisk. Increase heat to medium and bring it to a boil as you continue to stir. It should thicken as it cooks.
Once it reaches a boil, add the milk and continue to stir. Reduce heat to a simmer.
Take ¼ of the soup at a time and puree it in a blender at medium speed, until well combined. Since you are blending this in batches, you’ll need another pot to transfer the soup into after it’s blended. Or you can use an immersion blender.
Return soup to soup pot and gradually add the cheese, whisking with a fork as you do, until well combined. Simmer, covered, for about 20 minutes, stirring occasionally.
Serve, nice and hot! With some bread maybe? Perfecto!
Additional ingredient options: cooked broccoli, potatoes, chicken, sausage, cauliflower, bacon, carrots, peppers, pasta, spinach or different types of cheeses.
