Don’t heat up your kitchen! Enjoy a bowl of my Aunt Cathy’s cool, satisfying gazpacho tonight for a light summer supper.
Combine all ingredients in a large bowl. Add more tomato juice if a thinner consistency is desired. Chill until time to serve. Add more salt and pepper to taste. This is great with condiments such as a dollop of sour cream or creme fraiche, sliced green onion, a drizzle of high quality olive oil, or all of the above!
