Description

So thick and delicious this soup has to be called a stew.

Ingredients

  • ½ pounds Lean Ground Beef
  • ½ cups Diced Carrot
  • ½ cups Diced Onions
  • 2 teaspoons Minced Garlic
  • 2 stalks Celery Finely Chopped
  • 4 cups Beef Broth
  • 3 cups Water
  • 1 cup All Purpose Tomato Sauce
  • 1 teaspoon Thyme
  • ⅔ cups Barley

Preparation

Cook lean ground beef in a skillet over medium high heat and once it’s browned, drain grease.

Spray a Dutch oven with cooking spray and saute carrots, onions, garlic and celery for 2 minutes.

Add ground beef, broth, water, tomato sauce and thyme.

Stir in barley.

Let simmer uncovered for 1 .5 hours.

Serve as a main meal with crusty bread. Enjoy!

*Freezes really well.

Made this on Sunday for my lunches this week. I LOVE it! I have never used barley before, but I think I might. On top of that, I just read where it is really really good for you! Will definately make this again!

Very tasty and family friendly. I did double the meat and veggies to make it a bit hardier and thicker. I kept the liquids the same along with the Barley. I will make again. Thank you.
