The “Never Screw It Up, Can’t Go Wrong” Vegetable Soup recipe.
This recipe makes a lot of soup! I’m guessing at least 10 servings. It tastes even better the next day.
In a large stock pot over medium heat saute chopped onion and celery in oil for about 5 minutes. Add everything else including lentils if using them, and cook on low for about 2 hours or until everything is tender. You may need to add more water or stock so keep an eye on it!
