Delicious recipe full of the extra health benefits of grassfed beef.
To cook the steak pieces:
Cube meat into approximately 1 inch cubes, season with kosher salt and pepper. Put some water in a pan (to add moisture) and cook to desired doneness.
In a separate pan:
Warm olive oil, add onion, bell peppers and corn. Cook vegetables to al dente.
Mix ranch dressing with chipotle seasoning in a separate container.
In a large bowl, add cut romaine, cooked steak pieces, and al dente vegetables. Just before serving, add ranch dressing, pepper jack cheese and tortilla strips.
Toss and enjoy.
