Soba noodles are our new summer go-to food. Easy-peasy, with minimal time spent at the stove.
Wash and chop the zucchini, peppers and onion into bite-sized pieces.
In a covered medium saucepan, bring the water to a boil. Remove from the heat, add the noodles and allow to cook for 5 minutes.
Drain the noodles and rinse in cold water until the noodles are cool to the touch.
Toss the soba noodles, vegetables and sauce, then top with sesame seeds.
