Description

Great summer recipe!

Ingredients

  • ¼ cups Pecans
  • 2-¼ cups Rotisserie Chicken Pulled Apart
  • 2-¼ cups Sliced Strawberries
  • ¼ cups Chopped Celery
  • ¼ cups Chopped Cilantro
  • ¼ cups Diced Red Onion
  • 3 Tablespoons Balsamic Vinegar
  • 2 Tablespoons Olive Oil
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

Toast pecans in oven on 375F for 10 minutes. Chop pecans finely.

Mix together chicken, strawberries, pecans, celery, cilantro and onion. Slowly stir in vinegar and olive oil. Season with salt and pepper. Refrigerate for at least 30 minutes before serving.

Great for sandwiches or served over lettuce.
