Description

This Smoked Salmon and Quinoa Salad also features radishes, beans, tomatoes, spinach, and a gorgeous sesame oil dressing. Delicious, filling, and nutritious!

Ingredients

  • 1 can (14 Oz. Size) Red Beans
  • ½  Red Onion, Chopped
  • 10  Cherry Tomatoes, Halved
  • 8  Radishes, Sliced And Halved
  • 2 ounces, weight Baby Spinach
  • 5 ounces, weight Smoked Salmon, Sliced
  • ½ cups Quinoa, Cooked And Cooled
  • FOR THE DRESSING:
  • 2 Tablespoons Sesame Oil
  • 1 teaspoon Soy Sauce
  • 1 teaspoon Balsamic Vinegar
  • 1 clove Garlic, Chopped

Preparation

Place red beans, onion, tomatoes, radishes, spinach, smoked salmon, and quinoa in a bowl and toss well.

For the dressing, combine sesame oil, soy sauce, balsamic vinegar, and garlic in a small jar with a lid and shake to blend. Pour the dressing over the salad and toss.
