I adapted this recipe from Simply Recipes, adding more vegetables so that it would serve as a complete quick lunchtime meal. I usually serve it over mixed greens with a diced tomato on top.
Cook the macaroni according to the directions on the package. Timing is important here, since you should add the macaroni to the rest of the ingredients while it is still warm.
Mix the salmon, mayo/yogurt, mustard, and lemon juice in a large bowl. Add the shallots, celery, carrots, parsley, and dill.
Add the cooked macaroni (while still warm!) to the mixture. Season with salt and pepper. Be sure to taste, because you might need more of an ingredient, especially herbs, mayo, or lemon juice.
Serve over mixed greens with some tomato and enjoy!
