A sure-to-please, gluten-free, sugar-free, hearty quinoa salad with an amazing avocado dressing!
1. Place the quinoa in a pot with water (1 part quinoa, 2 parts water). Bring it to a boil then reduce to simmer. Cover and cook 15 minutes till all the water is gone. It should look translucent. No need to drain.
2. Add tomatoes, red onion, chickpeas, parsley, salt and pepper to the quinoa in a large bowl.
3. Use a mini chopper or mash the avocado by hand in a bowl. Mix in olive oil and lemon juice. Mix into quinoa and add salt and pepper to taste.
