Refreshing summer fruit and chicken salad using leftovers.
Use Ree’s recipe for Garlic Lime Grilled Chicken Breasts (click on related blog post for the recipe and instructions). Refrigerate the cooked chicken overnight.
When ready to prepare salad… Cube chicken and place in bowl. Add the mayonnaise and Poppy Seed Dressing. The fruit salad was also leftover from the night before. I used approximately a cup of blueberries, cup of raspberries, cup of chopped strawberries and cup of chopped pineapple. Add the fruit salad to the rest of the ingredients, mix and enjoy!
