Description

This lovely easy-to-make salad is a great salad to make for crowds and always get rave reviews every time I make it.

I call it my sisters salad becuase we always make it when we are together. It is hearty enough to be served alone or as a compliment to another dish. This salad pares well with a light crisp white wine.

Ingredients

  • 2 heads Romaine Lettuce, Chopped
  • ½ whole Red Onion, Finely Chopped
  • ½ cups Casa Fresca Cheese (Mexican Hard Cheese, Panela Or Cotija)
  • ½ whole Cooked Rotissere Chicken Cut Up
  • 2 whole Small Granny Smith Apples, Chopped
  • ⅓ cups Pine Nuts
  • ¼ cups Olive Oil
  • ¼ teaspoons Minced Garlic
  • ¼ cups Balsamic Vinegar
  • ¼ teaspoons Dijon Mustard
  • 1 pinch Oregano

Preparation

To prepare the salad, chop the Romaine lettuce, apples, and onion. Add to your salad bowl.

On top of that, add crumbled cheese and pine nuts.

Prepare the salad dressing by combining oil, balsamic vinegar, oregano, garlic, and Dijon mustard in a jar with a lid. Shake to mix. Add salt and pepper to taste.

This salad will feed 4 people easily, but if you are like me and my sister, it will feed two. Add a bottle of your favorite white wine, and voila! The perfect light meal.

Please note: This salad can be prepared with fresh homemade balsamic dressing or with your favorite bottle of balsamic vinaigrette.
