Mexican Chicken Salad
Description
Mexican Chicken Salad is so easy and so full of flavor!
Ingredients
- 1 head (Small Head) Romaine Lettuce, Torn Into Pieces
- ½ heads Iceberg Lettuce, Torn Into Pieces
- 2 cups Cooked Chicken, Cubed
- 1 cup Canned Black Beans, Drained
- 1 cup Corn Kernels
- 1 cup Diced Red Pepper
- 1 cup Tomato, Diced
- 1 cup Red Onion, Small Sliced
- 1 cup Avocado, diced
- 1 cup Cilantro, Torn
- 2 Tablespoons Taco Seasoning
- 1 cup Light Ranch Dressing
Preparation
Divide lettuce between four plates. Top each plate with ½ cup chicken and then ¼ cup each of black beans, corn, red pepper, tomato and red onion. Divide avocado among the plates and then the cilantro.
In a small bowl mix the taco seasoning with the ranch dressing then serve on the side with the salads.
