Description

Kielbasa, sweet potatoes, apples, onions, and bacon. That’s my kind of salad.

Ingredients

  • FOR THE SALAD:
  • 1 whole Sweet Potato, Peeled And Coarsely Chopped
  • 1 teaspoon Olive Oil
  • ½ cups Coarsely Chopped Onion
  • 1 cup Sliced Kielbasa Turkey Sausage
  • 1 Tablespoon Butter (optional)
  • ½ whole Large Honeycrisp Apple, Cored, And Chopped With Peel On
  • 2 Tablespoons Crumbled Bacon
  • 1 bunch Fresh Spinach Leaves
  • FOR THE DRESSING:
  • ¼ cups Light Sour Cream
  • 1 Tablespoon Maple Syrup
  • ½ Tablespoons Honey
  • 1 teaspoon Canola Oil
  • 1 teaspoon Red Wine Vinegar
  • 1 teaspoon Water
  • 1 pinch Cinnamon

Preparation

Heat oil in a large skillet over medium heat. Add potatoes and onions and saute until tender, about 5 minutes. Remove from pan and set aside.

Add kielbasa to pan and saute until browned. Add sweet potatoes and onions back into the pan with a little butter (optional) and saute everything over medium-low heat for another 5 minutes blend the flavors. Add raw apples and the pre-cooked and bacon to the skillet and stir to mix.

Tear the spinach into bite-sized pieces. In a large bowl, toss the spinach with everything from the skillet.

Whisk all ingredients for the dressing and adjust seasonings to your liking (I added a little salt). Serve over each individual salad.
