Grilled. Peaches. ’nuff said.
Heat your outdoor grill or grill pan over medium-high. Rub a little oil over the grates.
In a small bowl, toss the peach halves with 1 Tablespoon of oil, and a pinch of salt and pepper.
Place each peach cut-side down on the grill. Cover with a lid and grill 3 minutes. Flip and spoon a Tablespoon of cheese into each pit hole (sounds gross?) and cover the grill for 3 more minutes of grilling.
Toss the remaining oil with the arugula and place on your serving plate. Top with grilled peaches, the toasted walnuts, a good drizzle of honey and the chives.
Aaaah, the south!
