Description

A beautiful, super healthy fall slaw with Maple Tahini Dressing. I can’t keep enough of this around!

Ingredients

  • FOR THE SLAW:
  • 2 whole Apples
  • ½ whole Lemon, Juiced
  • 2 whole Carrots
  • 1 whole Rutabaga
  • 1 whole Kohlrabi
  • 2 stalks Celery
  • 1 cup Dried Cranberries
  • ¾ cups Walnuts Or Pumpkin Seeds
  • _____
  • FOR THE DRESSING:
  • ¾ cups Tahini
  • ½ cups Water
  • 1 whole Lemon, Juiced
  • 3 Tablespoons Maple Syrup
  • ¼ teaspoons Salt

Preparation

Shred apples and place in a bowl. Top with juice from 1/2 lemon. Peel and shred carrots, rutabaga, and kohlrabi. Add to apples and stir. Chop celery, stir into mixture. Add cranberries and walnuts or pumpkin seeds, stir to combine.

Dressing: Whisk together tahini, water, juice from whole lemon, maple syrup and salt. Pour over veggie/apple mixture. Stir.

I saw this and had to make it for lunch today. I didn’t have the rutabega or kohlrabi, so I used some of my Dad’s home grown cabbage which is very spicy, carrots, celery, craisins, sesame seeds, sunflower seeds, green onion, and apple. The dressing was incredible! I can’t wait to get the roots called for in the recipe next time I go to the big city shopping. Thanks so much for the recipe! and the dressing…well the dressing is going to end up on all kinds of salads ;)

Yum! Yummy Yum! Saw this, had the ingredients, made it, ate it for lunch. Excellent combination. Looking forward to how it mellows when I eat the remainder. I didn’t wait to chow down.

I did soak the cranberries and walnuts in a little warmed apple juice. Used the wee bit of juice that drained off in the dressing.

This was delicious.
