Description

Just short of crazy scrumptious! You will love this easily prepared salad on a hot summer evening!

Ingredients

  • FOR THE SALAD:
  • ½ cups Fresh Basil Leaves, Whole
  • 2 whole Large Red Ripe Tomatoes, Sliced
  • 16 ounces, weight Fresh Mozzarella Cheese (cut Into 1/2" Slices)
  • 6 slices Crispy Fried Bacon, Coarsely Chopped
  • 10 whole Pitted Large Green Olives, For Garnish
  • FOR THE DRESSING:
  • 4 Tablespoons Red Wine Vinegar
  • 2 Tablespoons Pure Extra Virgin Olive Oil
  • ½ teaspoons Black Pepper, Or To Taste
  • ½ teaspoons Sea Salt (or To Taste)

Preparation

Keep fresh basil leaves whole but rinse and dry on paper towels. On a large plate arrange tomato and mozzarella cheese slices and place the whole fresh basil leaves between the tomato and cheese slices in double rows for a lovely presentation. Add coarsely chopped bacon to the top. Spread the large green olives around the plate and add dressing to the top of the Caprese Salad. Add salt and pepper, to taste.

In a clean jar or container (with lid) add red wine vinegar, olive oil, salt and pepper (to taste). Put the lid on and shake vigorously to combine.

Note: I like to chill my assembled salad in the refrigerator for one hour (covered with plastic wrap), then add dressing right before serving.
