A yummy couscous made with dried cranberries, pistachios, sunflower seeds, mint and parsley.
In a medium pot, bring orange juice, cumin, salt, pepper, honey and garlic to a boil.
Finely chop the onions, parsley and mint and pistachios.
In a large bowl, add the orange juice mixture to the dried couscous and mix together. Cover the couscous tightly with plastic wrap.
Unwrap the couscous and fluff with a fork. Add cranberries, onions, herbs, sunflower seeds and pistachios and mix together. Squeeze in fresh lemon juice, then drizzle with some olive oil and season with a bit more salt and pepper if needed. Mix thoroughly. Serve slightly warm or at room temperature.
