Absolutely the best for a BBQ or any get-together.
Note: Preparation time does not include 1 hour refrigeration time prior to serving.
In a mixing bowl, add sliced zucchini (I do not peel them first, I just rinse them well), lemon zest and juice. Stir gently. Add remaining ingredients. Cover with plastic wrap and refrigerate at least 1 hour or until ready to serve.
Toss gently before serving. Pairs well with any grilled meat.
