Description

An amazing and filling lunch recipe with a great mix of protein and healthy fats from the avocado. The chicken curry mixture is mild and fruity with a great added crunch.

Ingredients

  • 100 grams Cooked Chicken Breast
  • 10 grams Chopped Raisins
  • 8 grams Chopped Walnuts
  • 25 grams Celery, Diced Small
  • 10 grams Diced Red Onion
  • 50 grams Low Fat Natural Yogurt
  • 1 teaspoon Tikka Curry Powder
  • 1 whole Avocado, Halved

Preparation

Prepare all the ingredients as described above. In a large mixing bowl, mix everything except avocado.

Halve the avocado and remove the stone. Use a spoon to scoop a little of the flesh out and widen the crater where the stone was. Add the chicken mixture to the hollow in the avocado and serve!
