An amazing and filling lunch recipe with a great mix of protein and healthy fats from the avocado. The chicken curry mixture is mild and fruity with a great added crunch.
Prepare all the ingredients as described above. In a large mixing bowl, mix everything except avocado.
Halve the avocado and remove the stone. Use a spoon to scoop a little of the flesh out and widen the crater where the stone was. Add the chicken mixture to the hollow in the avocado and serve!
