This is a great main dish salad or to use for sandwiches.
In a large bowl, combine the chicken, cheese, celery and pickle relish; mix. Add the mayonnaise, salt and pepper. Mix well. You can add the almonds directly into the mix or sprinkle on top.
For a sandwich, you’ll also need 6 lettuce leaves and 6 croissants.
** NOTE: You can use leftover chicken or a rotisserie chicken to make this. Feel free to substitute your favorite cheese.
