Chicken Salad is the perfect go-to for summer parties and picnics! It’s easy to make, perfect on a piece of bread for a simple sandwich, or on a croissant roll for a more elegant presentation. It’s a great addition for a salad, too. This super simple and easy Chicken Salad recipe will only take 5 minutes to make. Tip: Use the crockpot to cook your chicken breasts in and don’t heat up your house in the warm weather!
Cook your chicken breasts in your preferred method; I like to use the crockpot. Be sparing with any seasonings you use to cook the chicken—less is more! Cool the cooked chicken breasts in the fridge for about an hour (or longer), you want the chicken to be cold.
Cut apple into slices and pulse a couple of times in a food processor. Add chicken breasts, mayonnaise, dried cranberries, and optional cashews. Pulse all of the ingredients together until the mixture is smooth, unless you like it more chunky.
Serve sandwich style, on top of a salad, or eat with a spoon!
