Delicious and healthy! This salad can be prepared for a quick and filling lunch. The lime dressing adds a needed tang to the salad.
1. In a large bowl, combine the vegetables and bacon. Set aside.
2. In a small bowl whisk together the olive oil, lime juice, and salt and pepper to taste.
3. Drizzle the dressing over the salad and toss.
4. Plate and serve.
