Bacon and avocado is one of life’s great flavor combinations. I used spring mix type lettuce this time, but this salad is also great with romaine or butter lettuce for more crunch. Arugula also works well with this flavor combination.
For the salad:
Cut slices of bacon into thirds. Cook bacon and set aside to drain.
Slice tomatoes and dice avocado. Dress greens lightly with cilantro vinaigrette (see below). Toss bacon, tomatoes and avocado with greens. Add salt and pepper to taste. Serve immediately.
For the dressing:
Blend together lemon/lime juice, oil, cilantro, salt and pepper in a blender (or use an immersion blender). Serve immediately, or store in refrigerator for a day or two.
