Description

This flavor-packed summer salad features basil pesto chicken, juicy nectarines, nutty farro, and toasted sunflower seeds served atop a bed of mixed greens with honey balsamic dressing.

Ingredients

  • 1 cup Shredded Rotisserie Chicken
  • ¼ cups Prepared Pesto
  • 1 cup Cooked Farro
  • 2 cups Spring Mix Salad Greens
  • 2 cups Baby Arugula
  • 1 whole Nectarine, Pitted And Diced
  • 2 Tablespoons Sunflower Seeds, Toasted
  • ¼ cups Balsamic Vinaigrette, Prepared Or Homemade

Preparation

1. In a medium sized bowl toss together chicken, pesto, and farro.

2. Place salad greens onto 2 plates. Top with chicken and farro mixture. Divide nectarines and sunflower seeds evenly among plates.

3. Drizzle salads with 2 tablespoons each of honey balsamic dressing.
