Description

A simple yet filling salad, perfect for lunch!

Ingredients

  • 2 teaspoons Lemon Juice
  • 1 teaspoon Red Wine Vinegar
  • 1 teaspoon Oil From Sun-dried Tomatoes
  • 3-½ ounces, weight Feta, Chopped
  • ½ cups Sun-Dried Tomatoes, Chopped
  • 15 ounces, weight Canned Chickpeas
  • 1 whole Avocado, diced
  • Spring Mix Or Salad Greens, To Serve

Preparation

In a bowl combine lemon juice, red wine vinegar and oil. Mix.

In a separate bowl combine remaining ingredients. Top with dressing and mix until combined.

Serve over spring mix or salad greens.
