Description

This Asian Quinoa Salad is packed with nutrient rich ingredients, so tasty and fresh you cannot turn it down!

Ingredients

  • FOR THE SALAD:
  • 6 leaves Kale
  • 2 cups Finely Shredded Red Cabbage
  • 2 cups Quinoa
  • 2 cups Chickpeas
  • 1 cup Cherry Tomatoes
  • 1 whole Carrot
  • FOR THE DRESSING:
  • ¼ cups Soy Sauce
  • ¼ cups Coconut Aminos
  • ¼ cups Rice Vinegar
  • 1 Tablespoon Agave
  • 1 Tablespoon Sesame Seeds

Preparation

Pile kale leaves on top of each other and roll like a cigar. Slice as thinly as possible (spaghetti thin).

Combine all salad ingredients in a big bowl and mix to combine.

Combine dressing ingredients in a separate bowl. Keep the dressing separate until ready to serve.

A beautiful, most colorful salad I’ve ever seen. Tasty dressing. A bit too much cabbage for my taste, but that’s just me; hubby loved it. I think I’ll top it with some peanuts or cashews next time.
