Description

It seems that everyone has a meatloaf recipe that has been passed down through generations; some are covered in ketchup with sad, limp green peppers strewn across the top while others go as far as being stuffed with cheese and wrapped in bacon. I’ve tried many and they are all either dry or full of grease. If you’re like me, give this one a spin and it just might change your world!

Ingredients

  • 2 Tablespoons Extra Virgin Olive Oil, Divided
  • ½ whole Sweet Onion, Finely Chopped
  • ½ whole Red Pepper Finely Chopped
  • 2 cloves Garlic, Chopped
  • 1 pound Lean Ground Beef
  • 2 whole Eggs
  • ¾ cups Breadcrumbs
  • 1 cup Fresh Grated Parmesan Cheese
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Balsamic Vinegar
  • 2 Tablespoons Fresh Chopped Basil
  • 1 Tablespoon Fresh Chopped Parsley
  • 1 Tablespoon Salt
  • ½ teaspoons Fresh Cracked Black Pepper
  • 1 cup Marinara Sauce

Preparation

Preheat your oven to 350F°. Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the onions, peppers and garlic and sauté until peppers are soft and onions are translucent, about 5 minutes. Remove veggies from pan and place on a plate to cool. (Note – this step is vital! Don’t just toss the veggies in raw without taking the extra steps to cook them first. This ensures a moist meatloaf and enhances the flavors.)

When the onions and peppers are cool, combine all remaining ingredients together (except marinara) in a large bowl. Do not over mix! Line a baking sheet with aluminum foil and cover with remaining 1 tablespoon of oil. Pack your meat mixture into a loaf shape and place on greased baking sheet. Cover the top of the loaf with the marinara sauce and toss into preheated oven. Cook for 50 minutes, remove and allow to rest for 10 minutes. Slice, serve and drool until you make it again!

This is my all-time favorite meatloaf recipe. I’ve made it more times than I can count, and recommend it to everyone. Extremely delicious.

Best meatloaf I’ve ever made. I didn’t have any red pepper, so I used Trader Joe’s roasted red and yellow peppers that come in a jar. It tasted great.

Very tasty recipe! Reminds of me a really good meatball recipe that I have. I think the recipe has a typo – is there really supposed to be a 1 TBSP of salt? It was on the salty side for my taste and I’ll be lowering that way down next time. Otherwise, great flavor!

So so so good! I made the mistake of making it with 2lbs of ground beef and when I finally realized I added 2lbs instead of one, I had to add a dash of milk to moisten it. Even though I added 2lbs of meat, I didn’t double the other ingredients, and it still came out SOOOOO good! I also didn’t add the marinara sauce, I did ketchup, mustard and a sprinkle of brown sugar instead. :)
