Heat the oil in a large skillet over medium heat. Add the shallots and saute until they start to soften, 3 minutes. Add the turmeric, cayenne pepper and a pinch of salt. Bloom the spices for 1 minute.
Add the beef and cook until it’s browned, 3 minutes. Add the cabbage and tomatoes, and toss to combine. Reduce the heat to medium-low, cover and cook 10 minutes.
Toss in the peanuts, stir to combine, throw that lid back on and cook 10 more minutes, letting the cabbage wilt. Taste and add a little more salt if needed.
Serve her up and garnish with parsley if desired!
