A spicy twist on a classic comfort food.
Preheat oven to 400F. Put potatoes in to bake.
Combine hamburger, taco seasoning, onion, egg, taco sauce and tortilla chips (to crush chips, I put them in a large storage bag and beat with a soup can). Mix until well combined, but don’t overmix.
Spread mixture in a pie pan. Spread 1/2 a can of nacho cheese sauce over top of meatloaf. Place pie pan on cookie sheet or put a layer of tin foil on oven rack just in case it boils over. Bake meatloaf for 20-30 minutes.
When ready to serve, cut meatloaf into wedges like a pie. Serve with the baked potatoes. I like to use the other 1/2 can of cheese sauce on the potatoes themselves, to bring it all together.
