These are so easy and yummy!
Cut ribs into serving size pieces and trim excess fat (you want a little for flavor).
Dredge ribs in 1/3 cup flour.
Heat oil in a fry pan.
Brown ribs on all sides.
Remove ribs to a heavy pot.
In the fry pan, add pepper, onions, and garlic. Cook until tender.
Add to the big pot.
Combine remaining ingredients (minus the extra flour).
Pour over the ribs.
Cover tightly and cook slowly for 2 1/2-3 hrs.
Remove ribs to a serving plate (careful, they will fall off the bone).
Pour fat off the juices.
Stir the remaining 2 tablespoons flour with 2 tablespoons water; add the slurry to the gravy to thicken.
Pour gravy over hot buttered egg noodles, and serve.

This turned out a bit too tomatoey/ketchupy for us, but we still ate every bite. I started with a huge package of boneless short ribs from Costco so we had plenty to eat for the first meal, then shredded the leftovers for panini sandwiches another night, made tacos another night, and had plenty to fill won tons another night. I’ll make this again, but with half the ketchup. Thank you for the recipe!
