Cheap, makes a ton of food, and is completely comforting and delicious.
(If you are using homemade meatballs, brown them in the skillet before browning the onion, then remove the meatballs and set aside before continuing with the recipe.)
In a large skillet or saucepan, cook onion, pepper, and mushrooms in olive oil until onion is translucent. Add beef broth and bring to a boil. Stir in orzo, meatballs, canned tomatoes, and seasoning. Stir. Make sure the orzo is completely covered.
Cover and reduce heat to medium low. Simmer for 7-8 minutes until liquid has reduced, stirring occasionally. Scrape the bottom to make sure the orzo isn’t sticking. Add plum tomatoes and cook for 5-8 minutes until orzo is tender, stirring often. Sprinkle with cheese and serve. Thank all things comforting and wonderful.
