This healthy dinner combines the heartiness of lean beef with the delicate taste of the tender squash for a delicious taste combination.
Cut the squash in half and place on a baking sheet, scoop out the seeds, sprinkle with salt and place in a pre-heated 350 degree F oven for 45 minutes.
Sauté the beef in a pan over medium heat until browned. Then add the onion, garlic and tomato sauce. Season with salt and pepper to taste, and continue cooking for a few minutes.
Fill the squash cavities with the beef mixture and return to the oven for about 15 minutes. Remove from the oven and serve hot over some herbed risotto or with a salad and crusty bread.
