A delicious meatball dish that is so simple, it can even be made on a weeknight.
Combine the meatball ingredients together in a bowl. Mix well. Shape in 24 meatballs. Set aside.
Mix sauce ingredients (except corn) together in a saucepan. Bring to a boil. Add meatballs. Cover. Simmer gently for 30 minutes. Add corn for the last 5 minutes of cook time.
Serve over rice or mashed potatoes.
To adapt for a slow cooker, brown meatballs before adding them to the sauce in a slow cooker. Cook on low 5-6 hours. Add corn for the last 15 minutes of cook time.
Note: I often use corn bread stuffing mix instead of bread crumbs. Makes great meatballs.
