Shepherd’s Pie is quick easy and comforting! And it’s perfect if you have leftover mashed potatoes you are looking to use up from, say, Thanksgiving! This savory pie is always a crowd pleaser around my house!
Preheat oven to 350 degrees.
1. Brown ground beef with chopped onion. Add soup, ketchup, Worcestershire sauce and spices. Cook over medium heat for 10 minutes, stirring occasionally. Add salt and pepper to taste.
2. Spread ground beef mixture in the bottom of an 8×11 or 9×13 inch baking dish.
3. Spread the frozen peas, corn or green beans over the ground beef. (It really depends on your preference as far as vegetables go.)
4. Fold shredded cheddar into leftover mashed potatoes. Spread mashed potatoes over vegetables. Place the baking dish in the 350-degree oven for 30 minutes.
Note: If you do not have leftover mashed potatoes you will need approximately 6-8 yukon gold potatoes, peeled, boiled and mashed. Add 3 tablespoons of butter, 1/2 cup whole milk, and season with salt and pepper to taste.
