Description

If you like curry you will love this. Along with the veggies and white rice, it makes for a delicious meal!

Ingredients

  • 1 pound Ground Beef
  • 1 bunch Green Onions, Thinly Sliced
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Duck Sauce
  • 4 whole Large White Mushrooms Sliced (Or A 6.5 Oz. Can Of Sliced Mushrooms)
  • 1 whole Small Zucchini, Cut In Half Longway And Sliced In Quarters
  • 12 whole Aspargus, Ends Removed And Cut Into 2 Inch Pieces
  • ¼ cups Thai Red Curry Paste
  • 1 can (14 Oz. Can) Coconut Milk
  • 4 Tablespoons Chopped Cilantro

Preparation

In a wok or large fry pan, on medium heat, brown the ground beef and green onions together.

In a small bowl, mix together the lemon juice, brown sugar and duck sauce then set aside.

Once the ground beef is browned, add the mushrooms, zucchini and asparagus. Stir fry for 4 minutes. Add curry paste and stir for 1 minute. Then add the coconut milk and stir to combine. Let the dish simmer for 10 minutes then add the duck sauce mixture and simmer another 5 minutes. Garnish with cilantro. Serve over rice and enjoy!
