A healthier version of the famous sandwiches, but with the same delicious taste.
Slice the green peppers in half from the stem to the bottom and get rid of the seeds. Place pepper halves on a rimmed cooking sheet, cut side up. Cut the roast beef slices into long, thin slices and fold cheese slices in half, one cheese slice for every pepper.
Preheat oven to 400ºF.
Slice the onion into thin semi-circles.
Put the olive oil and butter in a skillet or saute pan and heat over medium heat. When butter is melted add the onions onions and cook and stir until golden and caramelized. Add the garlic when onions are almost done.
Add the roast beef into the saute pan. I like to use tongs at this point to make sure the beef gets mixed in well with the onions and garlic. While the meat is cooking put the first layer of cheese into the peppers. Cook meat for a few minutes till browned.
Stuff meat into peppers and top with cheese. Put it in the oven for 20–25 minutes and enjoy!
