Even my picky kids will eat this yummy meatloaf that is a family recipe! You can even substitute turkey for the meat if you want.
In a bowl, combine meat, bread crumbs, egg, soup mix, ketchup, salt, and pepper. Mix by hand, then form into a loaf shape. I never measure the bread crumbs, ketchup, salt or pepper but typically 1 cup bread crumbs will work for 3 pounds of meat. (If mixture seems too dry, add another egg. If mixture seems too wet after adding ketchup and eggs, add more bread crumbs. Fake it!)
Combine 4 cans of steak sauce with two cans of water. Add some more ketchup for flavor (be creative with the amount, but don’t thin the sauce out too much). Heat slowly in a sauce pan and simmer for a few minutes. Turn off heat until it’s time to serve. (Prepare this while meatloaf is baking, so it’s ready to cover the loaf during the last 15 to 30 minutes of baking.)
Bake meatloaf uncovered at 350 F for an hour. Cover with some of the gravy and bake for an additional 15 to 30 minutes. (I like my meatloaf well done!) Serve with mashed potatoes and peas.
Pray for leftovers, as it makes the best cold sandwich in the world on soft white bread with lettuce and mayo. Sliced dill pickles with a little ketchup is also an option, but hold the lettuce and mayo on this version.
