Delicious oxtail stew
** The quantity of vegetables and oxtails that you use in this recipe varies depending on the size of your pressure cooker — adjust accordingly.**
Brown the oxtails in your pressure cooker.
Add onion (cut in large pieces), parsley, salt & pepper.
Cover with water. Cook in the pressure cooker for 45 minutes or so (approximately 15 minutes per pound).
After 45 minutes, add potatoes and carrots and more water (per instructions for your pressure cooker) and cook in the pressure cooker for approximately 8 to 10 minutes.
Serve over rice.
