Description

A delicious and exotic stew made with chickpeas, sweet potato, red peppers and cabbage.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Onion, Diced
  • 1 clove Garlic, Minced
  • 1 whole Large Sweet Potato, Peeled And Chopped
  • 2 cups Cabbage, Shredded
  • 1 whole Red Pepper, Diced
  • 1 can (15 Oz. Can) Chickpeas
  • 1 can Diced Tomatoes
  • 1 teaspoon Ginger
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • ½ teaspoons Ground Pepper
  • 2 cups Vegetable Broth
  • ¼ cups Raisins

Preparation

In a large pot, heat the oil and add the onions, garlic and sweet potato. Cook until tender, then add cabbage, red pepper, chickpeas, tomatoes and spices. Cook for another 5 minutes. Add broth and bring to a boil. Reduce heat and simmer covered for 20 minutes. Add raisins and simmer for another 5 minutes. Serve on top of cooked couscous.

This dish has great flavor and is something very different to other things I’ve made before. I had to add some broth while cooking the sweet potatoes- they were starting to get too brown before they were tender. Other than that, this is a great recipe!
